Description
The baked goods are easy and quick to make. Golden, tasty flatbreads can be served hot or cold. They stay soft for a long time. For the cheese filling, Sulguni, Urda (ricotta), brined cheese, and similar work very well. They go well with tea or coffee.

Prepare the listed ingredients. You can use thick ryazhenka instead of matsoni.

Wash the spinach and parsley leaves, pat dry with paper towels, and trim off the stems. Cut into thin strips and transfer the shredded greens into a deep container. Sprinkle with 2 pinches of salt and knead thoroughly, then let sit for 10 minutes so they release their juice. Squeeze out the juice.

In a deep bowl, combine matsoni, a chicken egg, and salt. Whisk for about 1–2 minutes.

Mix in the wheat flour, setting aside a little for rolling out the dough.

Knead a soft dough, cover it with a towel, and leave for 20 minutes.

Stir urda (ricotta) or grated suluguni into the filling.

Divide the dough into several portions and roll out each one. Spread 1–2 tbsp of filling on each. Pinch the edges of the flatbread closed on top and gently roll it out again with the filling inside, taking care not to tear the dough.

Heat a skillet without greasing it with oil. Place the flatbread on the skillet and fry until golden-brown spots form on each side, about 2 minutes per side over medium heat.

Melt the butter and brush it over the surface of the baked flatbread. Fry the remaining ones the same way.
