Meringue roll with custard cream
Description
For filling a meringue roll, pastry cream, cream cheese, or whipped cream are suitable. Any of these creams can be made chocolate. As a berry filling, raspberry, strawberry, or blueberry work well.
Instructions
- 1
Step 1

To prepare a meringue roll, gather the necessary ingredients.
- 2
Step 2

First, you need to prepare the cream so that it has time to cool. Pour milk into a saucepan. Add egg, sugar, and starch. Mix everything and place over heat.
- 3
Step 3

While constantly stirring, bring to a boil. The mixture will thicken. Remove from heat and cool.
- 4
Step 4

While the cream is cooling, prepare the meringue. Separate the egg whites from the yolks—about 6 eggs. Mix the whites with powdered sugar and turn the mixer to the lowest speed. Gradually increase the speed.
- 5
Step 5

When the mixture becomes fluffy and thick, stir in the starch and lemon juice.
- 6
Step 6

Spread the ready meringue onto a Teflon mat placed on a baking sheet (30*40). Put the baking sheet into the oven preheated to 140 degrees for about 25 minutes. Adjust according to your oven.
- 7
Step 7

The finished meringue remains soft and airy inside, with a thin crispy crust on the outside. Remove it from the oven and let it cool. Then flip it onto a sheet of parchment paper and remove the Teflon mat.
- 8
Step 8

Mix the soft butter into the cooled cream.
- 9
Step 9

Set aside a little of the cream in a piping bag for decoration. Spread the remaining cream over the meringue, leaving a small border around the edges.
- 10
Step 10

Roll into a roll.
- 11
Step 11

Trim the edges of the roll to make it even. Decorate with the reserved cream. Refrigerate to let it soak and allow the cream to set slightly.
- 12
Step 12

You can decorate the roll with any berries or fruits.
- 13
Step 13

Enjoy your meal!
