
Cherry meringue roll
Description
Each piece of meringue roll simply melts in your mouth. The sweetness of the meringue pairs perfectly with the tartness of cherries. In summer, you can add fresh pitted cherries to the roll, while frozen cherries work well in winter.

To prepare the roll, have all the ingredients ready.

First, prepare the filling. Mix pitted cherries with sugar and starch. Place over heat and bring to a boil. If the cherries are not juicy, you can add a little water.

The cherry filling will be thick. Leave it until completely cooled.

For the meringue, separate the egg whites from the yolks. Combine the egg whites with powdered sugar.

Turn on the mixer at the lowest speed to start dissolving the sugar in the egg whites. Gradually increase the speed. Beat until thick and fluffy. Then add the starch and lemon juice. Mix well.

Line a baking sheet with a Teflon mat and spread the prepared meringue over it. Place in the oven at 150 degrees for about 25 minutes.

The finished meringue has slightly increased in size. A crisp crust has formed on top, but inside it is still soft like soufflé. Remove the baking sheet from the oven.

Cover the meringue with a sheet of parchment paper and flip it using a second baking tray. Remove the Teflon mat. Let it cool.

For the cream, combine the cream, cream cheese, and 1 tablespoon of powdered sugar. Beat until fluffy.

Set aside a little cream for decoration. Spread the remaining cream on the meringue and add the cherry filling.
