
Meringues
Description
The dish is prepared without unnecessary complications. Meringues, which I also call "biscuits," simply melt in your mouth. They are easy to make, but there are secrets to whipping and baking them. The egg whites must be chilled before whipping. Salt is added to stabilize the whipped whites. Sugar must be added in very small amounts. Also, baking meringues requires a bit of skill. Never put the meringues into a hot oven; they must be baked gradually at a low temperature. Meringues can be served on their own or used to decorate cakes. Sometimes I bake them in the shape of mushrooms and decorate them with melted chocolate. Children love meringues. Good luck! The finished dessert is now ready to be served.

Separate the egg whites and yolks.
