Description
The recipe won't take much time. It might seem that meringue is made from just two ingredients—sugar and egg whites—so what could be difficult? However, it's very important what kind of bowl you use to beat the whites, at what speed, the temperature of the egg whites, and the baking temperature. Even when following all the rules, it's hard to make a perfect meringue, but with practice, you'll succeed. Through trial and error, you'll achieve the perfect result, and I'll share some secrets with you. Serve chilled.

Prepare all the necessary ingredients. The egg whites should be slightly warm, as this will make the mixture fluffier and more airy when whipped.

Separate the egg whites from the yolks. Make sure no shell fragments or yolk get into the whites. Place the egg white into a clean and absolutely dry bowl for whipping. Start beating at low mixer speed, gradually increasing the speed.

When the mixture begins to thicken, add the sugar and beat until you get a fluffy white meringue.

The mass should increase in volume by 3 times.

Place the protein mixture onto parchment paper using a spoon or pastry bag, bake in the oven at 150 degrees for 10 minutes, then reduce the temperature to the minimum and bake for another 10 minutes.

If you like meringues with a crisp crust, increase the baking time by another 5–7 minutes. Do not remove the meringues from the oven immediately; leave them to cool inside with the oven door open for 10 minutes.
