
Mexican pudding
Description
The recipe won't take much time. The tradition of serving sweets and desserts with tea originated in Mexico during the period of English colonization. Mexican rice pudding is no exception. It is very sweet, but delicious and aromatic. Serve it chilled.

Prepare the ingredients. Rinse the rice in cold water and drain in a colander. Pour hot water over the raisins and let soak for 10 minutes, then drain in a colander.

Pour the rice into a saucepan, pour in the milk, add salt, a cinnamon stick, and lemon zest. Bring the milk to a boil, then cook over low heat until the rice is tender, about 40 minutes.

Remove the cinnamon and zest. Add condensed milk, vanilla, and raisins, then mix. Cook until the rice has absorbed the milk, stirring occasionally.
