Mexican cornbread

Description

Perfect with tea and coffee. Preheat oven to 300 degrees Fahrenheit (150 degrees Celsius). Lightly grease a baking pan. In a large bowl, beat butter and sugar together. While beating, add eggs one at a time. Add corn, chili, Monterey Jack cheese, and cheddar cheese to the mixture; mix well. In a separate bowl, combine flour, cornmeal, baking powder, and salt; mix well. Add the flour mixture to the corn mixture; stir until smooth. Pour the batter into the prepared pan. Bake in the preheated oven for 1 hour, or until a toothpick inserted into the center comes out clean. The cake is done. Serve warm.
