Mexican lasagna

Description

The idea to make Mexican-style lasagna came to me after visiting a Mexican restaurant. They served a dish that was very similar (I can't even remember what it was called), and I decided to recreate it from memory at home. It turned out delicious! Mexican lasagna is prepared almost the same way as Italian lasagna, except the ingredients are completely different. This simple recipe for Mexican lasagna combines the best elements from wonderful Mexican dishes like fajitas, tortillas, enchiladas, and burritos. I hope you'll enjoy it :) Just a warning—this dish is very filling.

    Preheat the oven to 200 degrees. Heat olive oil in a roasting pan, add finely chopped bell peppers, onion, and chili pepper. Season with salt and cook over medium heat for about 10 minutes.

    Add finely chopped cilantro to the vegetables.

    Then add finely chopped tomatoes and water to the skillet. Mix and simmer over medium heat for 10 minutes. While the vegetables are simmering, combine 2/3 of the cheese, corn, and black beans. Add a portion of the bean-corn mixture to the vegetables in the skillet.

    Take an ovenproof dish and start assembling our lasagna. Spread about one-third of the vegetable sauce on the bottom, then place two tortillas on top. On the tortillas, add some of the filling made of beans, corn, and cheese.

    Then - again a little sauce, two tortillas, and a layer of vegetable filling.

    And once again the same thing—layer of sauce, two tortillas, layer of filling.

    The top layer should be a layer of tomato sauce. Sprinkle the reserved grated cheese on top.

    Bake for approximately 25 minutes at 200 degrees until a cheesy crust forms. Remove the cooked Mexican-style lasagna from the oven and serve. ;)
