
Mecklenburg Potato Roll with Cracklings

So, prepare the ingredients. Boil the potatoes in their skins until almost done, let them cool, and peel them. If the onions are small, use more; if they are large, 2 will be enough.

Grate the potatoes on a fine grater.

Mix the flour with the starch and add to the potato mixture.

Beat the eggs with salt, sour cream, and melted butter. Pour into the potatoes.

Knead a dough that is not too stiff, and let it rest for 30 minutes.

Now prepare the filling. To do this, cut the bacon into cubes and fry it in a dry skillet until the fat (lard) renders.

Dice the onion, add it to the bacon, and fry until all ingredients are cooked through. Season with salt and pepper to taste.

Remove from the heat, add chopped herbs, and stir.

Roll out the dough to a thickness of 1–1.5 cm. For convenience, I do this on parchment paper.
