
Honey cake with cream cheese
Description
The recipe won't take much time. Despite the fact that the layers are made from a shortbread honey dough, they soak up the cream very well. For extra flavor, you can add a bit of berry jam between the layers, preferably with a hint of tartness. It can be served with tea or coffee.

To make the cake, gather all the necessary ingredients.

In a spacious pot, add butter, honey, and sugar. Place it over heat and warm until fully dissolved, so that all the ingredients combine into a uniform mass.

Then add the soda and stir. The mixture will start to foam and increase in volume. Keep the pot on the heat until the foam turns golden. Be sure to stir constantly. Then remove the pot from the heat and let the mixture cool to a warm state.

Add the eggs to the mixture. Stir.

Gradually add the flour and knead the dough. It will be slightly sticky to the hands.

Place the finished dough in the refrigerator for at least 2–3 hours. During this time it will cool down and stop sticking to your hands.

For baking, roll out a sheet of dough and cut out a circle, in the center of which cut a hole. Prick the dough with a fork. You don’t need to roll it extremely thin. Bake the required number of layers in an oven preheated to 180 °C for 8–10 minutes. The most optimal amount for a cake is 3 layers.

For the cream, whisk the heavy cream with powdered sugar into a fluffy, stable cream. Add the creamy cream cheese. Mix everything well until you obtain a smooth, homogeneous cream cheese.

Pipe the cream onto the first layer using a pastry bag.

Gather all three layers this way. Apply the cream to the top layer. Place the assembled cake in a cake box and seal it tightly with the lid. Let it soak for a day. In a closed package, all the moisture from the cream will be absorbed into the layers, thereby soaking them perfectly.

Decorate the finished cake with flowers to your liking.

You can decorate the cake with cookies. If you are making a cake for the birthday person or just want to celebrate a special date, bake a small layer from leftover dough and write the name or congratulatory text using a pastry bag with a fine tip.
