
Honey cake using a water bath
Description
The recipe won't take much time. I'd like to share with you a simple and very successful idea. It can be served with tea or coffee.

1. First, place the butter and honey into a bowl and set it over a water bath.

2. In a separate bowl, beat the eggs with sugar and a pinch of salt. Remove the melted honey mixture from the heat, let it cool slightly, then combine with the eggs. Beat everything until smooth. Sift the flour with the baking powder and gradually add it in small portions.

3. Transfer the dough onto the work surface, and continue adding flour to form a firm but not too stiff dough. Let it rest for about 15 minutes.

4. Meanwhile, prepare the cream. Beat the eggs with sugar until smooth. Add butter and flour, then place over heat. Gradually pour in the milk, stirring constantly to prevent lumps. Cook the cream over low heat, stirring continuously, until it thickens. Remove from heat and let it cool.

5. Divide the dough into 6-7 equal parts. Roll each part out quite thinly and cut into the shape of a plate, for example.

6. Place the cake and scraps on a baking sheet and put in a preheated oven at 180 degrees.

7. The cake layers bake quite quickly: the first one for about 7 minutes, the following ones for approximately 5 minutes.

8. And then it's quite simple: place the cake layer on a plate and spread it with cream, do the same with all the layers.

9. Carefully spread the remaining cream over the top and sides. Crush the leftover pieces into crumbs using a rolling pin or blender.

10. Sprinkle the cake with them. That's it, let it sit and soak, then it can be served.
