
Honey cake
Description
The pastry is prepared simply and quickly. The diameter of the assembled honey cake is 20 cm; if you plan to make a cake of a larger diameter, then double the amount of ingredients. To avoid waiting for the dessert to soak, you can pre-soak the cake layers with syrup or water with jam, topping, and immediately assemble the whole cake, serving it to the table. Serve chilled or slightly warm.

Prepare the specified ingredients.

Pour honey into a non-stick-bottomed container, add sugar, a pinch of salt, and margarine, or replace it with butter.

Place the container on the stove over medium heat and bring it to a boil, stirring constantly. Then, over the next 5–7 minutes, cook the mixture until it turns a caramel color. This moment is very important, as the mixture burns quickly!

Add baking soda to the container and stir quickly.

When the mixture foams up, turn off the heat without stopping stirring. That is why it is important to choose a container with high sides. Let everything cool for 20 minutes.

Beat the chicken eggs and pour the whole mixture into the honey mixture, stirring quickly.

Then mix wheat flour into the mixture so that the dough has a consistency similar to clay or plasticine: soft and pliable. On parchment paper or foil, spread part of the dough, dusting with flour. Preheat the oven to 180 degrees and bake the cake layers in it one by one.

Cover each baked cake layer with a plate and trim it to the plate’s diameter.

In a food processor or mixer bowl, whip sour cream of any fat content for 5–7 minutes with 0.5 cup of granulated sugar, lemon juice, and cream stabilizer, until you get a sour cream frosting.

Spread cream between all the honey cake layers and coat the top and sides of the cake. Place it in the refrigerator for 2–4 hours to soak, or better yet, leave it overnight.

Grind the leftover cake layer trimmings into crumbs.

Remove the cake from the refrigerator and coat it in crumbs on all sides except the bottom.
