Instructions

  1. 1

    Step 1

    Step 1

    1. In a large bowl over a water bath, melt 70 g of butter, sugar, and honey. Stir occasionally.

  2. 2

    Step 2

    Step 2

    2. The mass should melt completely. Let it cool slightly.

  3. 3

    Step 3

    Step 3

    3. In a separate bowl, beat the eggs. They should just be well mixed.

  4. 4

    Step 4

    Step 4

    4. Gradually add the eggs to the cooled mixture of butter, sugar, and honey. Stir constantly.

  5. 5

    Step 5

    Step 5

    5. After adding all the eggs, mix in the baking soda neutralized with lemon juice or vinegar. Stir and place over a water bath on medium heat.

  6. 6

    Step 6

    Step 6

    6. Cook the mixture over a water bath for 30–40 minutes, until the mixture turns brown. Stir occasionally. After the specified time, remove from the water bath and add vanilla. Mix well and let it steep for about 10 minutes.

  7. 7

    Step 7

    Step 7

    7. Add flour to the liquid mixture and knead a firm dough. Preheat the oven to 180 degrees. Prepare several baking trays—line them with parchment paper. Divide the dough into equal portions and roll them out on a floured surface, preferably into a circular shape.

  8. 8

    Step 8

    Step 8

    8. Bake each cake for 5-7 minutes, until golden brown. I use two baking sheets; while one cake is in the oven, I prepare the second one and place it on the other baking sheet.

  9. 9

    Step 9

    Step 9

    9. Do not stack the baked layers on top of each other; they must cool completely! Then take a large plate and trim each layer to match its shape. It's best if the plate is smaller than the cake stand or another plate on which you'll serve the honey cake.

  10. 10

    Step 10

    Step 10

    10. You'll end up with wonderful layers that need to be spread with cream.

  11. 11

    Step 11

    Step 11

    11. Prepare the cream. Beat softened butter, sour cream, and condensed milk with a mixer. I use sweetened condensed milk.

  12. 12

    Step 12

    Step 12

    12. Add the cream to the mixture and continue beating until it becomes thick and firm. Alternatively, you can whip the cream separately, then add it to the cream and mix well.

  13. 13

    Step 13

    Step 13

    13. Spread each cake layer with cream, assembling the cake.

  14. 14

    Step 14

    Step 14

    14. Spread the cream over the top and sides of the cake.

  15. 15

    Step 15

    Step 15

    15. Decorate the honey cake with crumbs made from the trimmed cake edges. Simply crush them and sprinkle over the cake. Bees are attracted to honey—next, I'll explain how to make them.

  16. 16

    Step 16

    Step 16

    16. Melt the dark chocolate enough to form an oval bee body. Use almond slices for the wings. The yellow stripes can be made from saffron diluted in water mixed with powdered sugar to create icing. Alternatively, you can melt yellow chocolate (though it's hard to find). The stripes can also be white!

  17. 17

    Step 17

    Step 17

    17. Chill the finished honey cake in the refrigerator. It is advisable to leave it overnight. and have a wonderful celebration!
