
Honey roll
Description
Perfect with tea or coffee. This roll is a great choice for a family tea party. Since sour cream is often not the best quality and becomes thin when whipped, we add cream cheese to the filling. You can also drain it to remove excess liquid: spread the sour cream on cheesecloth folded in several layers, tie it up, and hang it. Or add a little bloomed gelatin to the cream. The aroma and flavor of the sponge will depend on the type of honey you use.

Prepare all the necessary ingredients for making a honey roll.

In a sauté pan or heavy-bottomed saucepan, add the butter, honey, a pinch of salt, and sugar, and melt over low heat.

Mix the sour cream for the dough with baking soda and transfer to the saucepan with the honey mixture.

Mix everything and cook over low heat, stirring, until caramel-colored; this will take several minutes. The mixture will foam vigorously at first, then settle.

Remove the pot from the heat, cover with a lid, and let cool to room temperature.

Break the small egg into the honey mixture and whisk with a whisk until smooth.

Sift the flour into the mixture and mix until the dough is smooth and uniform. It should be the consistency of thin sour cream.

Line the baking sheet with parchment paper or a baking mat and spread the dough in a thin layer. Place the baking sheet in a hot oven and bake at 180°C for 10–12 minutes. Remove the finished layer, trim the edges to even it out, and let cool. Save the trimmings; you will need them later.

In a bowl, combine the sour cream, cheese, and powdered sugar. Whisk thoroughly until smooth and fluffy.

Finely chop the trimmings. Peel the cake layer off the parchment and set it back down. Spread two-thirds of the cream over the surface and roll it into a log, using the parchment to help. Cover the roll completely with the remaining cream.

Completely coat the honey roll with crumbs made from the trimmings and refrigerate for 5–7 hours to allow it to soak through and set.
