
Honey cake in a hurry
Description
Perfectly complements tea and coffee. You can use any honey variety, the main thing is that it shouldn't have a bitter aftertaste. To ensure the cake rises well and becomes fluffy and airy, don't forget the baking powder. You can substitute it with 1 tsp of baking soda neutralized with vinegar or lemon juice. Instead of vegetable oil, you may use melted butter or high-quality margarine, but not spread. By the way, don't forget the lemon juice or lemon flavoring—it perfectly enhances the honey flavor.

Prepare the listed ingredients. Melt the honey in a saucepan or microwave if it has crystallized.

Put the chicken eggs into the bowl of a mixer or food processor, add sugar and salt. Beat for 3-4 minutes at high speed until fluffy and airy.

Pour floral honey and odorless vegetable oil into the egg mixture. Gently mix.

Add the baking powder and sifted premium wheat flour. Mix them in with a whisk, but do not beat, so as not to release the air bubbles from the batter. Pour in the lemon juice or flavoring and mix once again. Optionally, you can add a little ground cinnamon or vanilla sugar.
