
Honey bread with oat flakes
Description
The recipe won't take much time. I use water for the bread; if you replace it with milk, you'll get a bun that will be devoured in an instant. Use only natural, aromatic honey—the kind you love. I have a jar of wildflower honey with sunflower—it has a wonderful aroma that transfers to the baked bread. If you don't like oat bran, replace it with oat flakes, but in a smaller amount. I prefer having slightly less oat flakes than bran—the bread turns out more tender and well-baked. Serve it cooled down or slightly warm.

Prepare the ingredients for the bread. Let's get started!

Dissolve fresh yeast, honey, and salt in warm water.

Add the oats, bran, half of the flour, and vegetable oil. Start kneading the dough with a spoon; once the flour is moistened, begin adding the remaining flour, thus adjusting the amount as needed. Depending on the quality and moisture of the flour, you might need plus or minus half a cup. I used exactly 3 cups.

This is the kind of dough ball you should end up with—elastic, soft to the touch, but not sticking to your hands. Cover it with plastic wrap and place in a warm spot for 1–1.5 hours.

I usually put it in a warm oven, so within 1 hour the dough has time to rise well, 2-3 times. Press it down with your hands. Knead thoroughly.

Shape the bread roll. Grease the baking pan with butter, and brush the roll itself with butter or beaten egg, if desired. Sprinkle with oats.

Cover with plastic wrap, but not tightly, so the dough doesn't dry out while still allowing the loaf to rise freely. Leave for 30 minutes.

This is what the loaf looks like after 30 minutes. Turn on the oven to 180 degrees and preheat for at least 10-15 minutes. Place the bread inside and bake for 45-50 minutes. I put the pan on the bottom rack. The ceramic dish doesn't heat up quickly, so the bottom of the bread doesn't burn; on the contrary, it matches the top.
