Honey Chicken from Winterfell

Description

The recipe won't take much time. Almost all recipes for these dishes can be found in old Roman and British cookbooks, and nearly all the ingredients are still accessible today. A cookbook was even published based on the novel. One particularly popular recipe is honey chicken. The original recipe was found in ancient Roman books, and it's this version I'd like to share with you today. For making honey chicken, I decided to use a home-raised chicken to get the flavor as close to the original as possible, but I'm sure store-bought chicken will work just as well. Serve hot.

    Prepare all the necessary ingredients. Rinse the chicken, remove excess fat, and dry with paper towels.

    Rub the chicken with olive oil, then season with salt. You can also sprinkle a little black pepper or a chicken spice mix. Transfer the chicken to an ovenproof baking dish and place it in an oven preheated to 180°C. Cooking time depends on the chicken itself and its weight. If you're using a home-raised chicken weighing up to 1.5 kg, you'll need to roast it for at least an hour—add about 100 ml of water to the baking dish. For store-bought chicken, cook for 40–50 minutes. To check if the chicken is done, pierce the breast; if the juice runs clear and the meat is white, the chicken is ready.

    While the chicken is baking, prepare the sauce. Mix apple cider vinegar, honey, dried mint, 1 tablespoon of olive oil, and a handful of raisins. Transfer everything to a saucepan and simmer over low heat until the raisins swell and the sauce thickens.

    The sauce is ready. It turned out very aromatic!

    Pour the cooked chicken with honey sauce. Top with raisins. Serve the chicken hot with any side dish.
