
Honey sponge cake

It’s very simple. First, crack the eggs into a bowl and add honey and sugar.

Beat for about 10 minutes until a very dense mixture forms. The volume should increase roughly 3 to 4 times, so don’t slack off—you need to beat for a long time.

Now you can add flour to the egg mixture.

Now we’re not whisking anymore—just fold gently from bottom to top until evenly mixed.

Place in the oven and bake for 30–40 minutes at 180 degrees until done. The easiest way to tell if it’s ready is the classic toothpick or knife test :)

Now, if you like, you can cut it into 2–3 layers and spread each layer with boiled condensed milk.
