
Honey gingerbread cookies for the Christmas tree

Baking is simple and quick to make. Olivier salad, tangerines, champagne—all of that is very nice, but personally I picture New Year’s touches a little differently. Take honey gingerbread for the Christmas tree, for example—that really is a festive decoration for the home: it lifts the mood, fills the house with a lovely aroma, and above all gives children a feeling of celebration and holiday spirit. Of course, making honey gingerbread takes some effort, but it’s worth it—when your tree is decorated not with the usual baubles and garlands but with real gingerbread, you’ll know the work paid off :) Good luck

Take a sauté pan or a small saucepan and mix the sugar and butter in it. Warm it, stirring, until the sugar and butter form a smooth, uniform syrup.

Add honey to the resulting syrup. Stir.

Sift the flour into a bowl, then add cloves (crushed in a mortar), ginger, cinnamon, cardamom, and 3 egg yolks.

Add the honey mixture to the flour mixture, mix thoroughly, and begin kneading the dough.

Knead the dough until it is smooth and uniform (as shown in the photo).

Roll out the resulting dough to a sheet about 5 mm thick and cut shapes from the dough (special cutters are sold in supermarkets).

Arrange the cut-out dough shapes on a baking sheet lined with parchment paper.

If you plan to hang gingerbread cookies on the Christmas tree, don’t forget to make small holes in the dough for threading strings or ribbons. The holes are easy to make with ordinary drinking straws.

Bake the gingerbread for 15 minutes at 190 degrees. Then decorate the gingerbread with icing, for which you need to mix lemon juice and icing sugar until you get a smooth, slightly thick mixture.

Either coat the gingerbread with melted chocolate, then decorate with icing. I make some gingerbread with chocolate and some without.

Cool the finished gingerbread until the chocolate and icing have set, then they can be hung on the Christmas tree.
