
Honey crackers
Description
This recipe will yield 10 large (10 cm) and 48 small (5 cm) crackers. The baking is done. Serve at the table.

1. Prepare the dough. Chill the butter and cut it into pieces. Combine flour, brown sugar, baking soda, and salt in the bowl of a food processor and mix at low speed. Add the butter and mix until the mixture resembles crumbs.

2. In a small bowl, whisk together honey, milk, and vanilla extract.

3. Add to the flour mixture and mix in a food processor. The dough should be very soft and sticky. Lightly flour a large piece of plastic wrap, then place the dough on it and shape into a rectangle about 2.5 cm thick. Wrap it up and refrigerate for about 2 hours or overnight. Meanwhile, prepare the topping, if using, by combining sugar and cinnamon in a small bowl.

4. Divide the dough in half and return half to the refrigerator. Sift flour evenly over the work surface and roll out the dough into a long rectangle about 3 mm thick. If the dough sticks, add flour as needed.

5. Trim the edges of the rectangle, then use a knife to cut it into strips and separate into crackers. Repeat with the remaining dough. Place the crackers onto two baking sheets lined with parchment paper and sprinkle with topping. Let rest for 30 to 45 minutes in the refrigerator or 15 to 20 minutes in the freezer.

6. Preheat the oven to 175 degrees. You can decorate the crackers with dots using a toothpick. Bake the crackers for 15–25 minutes, until browned and firm.
