
Honey muffins with chocolate glaze
Description
Preparation: Melt honey with butter or margarine over low heat in a saucepan, stirring constantly. Transfer to a bowl and let cool. Grease a baking tray. Once the honey and butter mixture has cooled, peel the apples and cut them into large pieces. Preheat the oven to 160°C. Cake batter: Beat the honey and butter mixture with a mixer at high speed, adding Amaretto. Add eggs one at a time, beating the mixture for about 30 seconds at high speed after each addition. Mix flour and baking powder with baking soda, then incorporate into the batter using a mixer at medium speed until smooth. Add ground walnuts and the chopped apples. Pour the batter onto the prepared baking tray, smooth the surface, cover with aluminum foil, and bake. Baking time: approximately 20 minutes. Strain the jam through a sieve, remove the foil from the cake, and immediately brush the surface with the jam using a pastry brush. Cover the cake again with foil and let it cool on the tray. Remove the foil. For decoration: Glaze the honey cake with chocolate icing and cut into portion-sized pieces.
