Step 1

1. Preheat the oven to 200 degrees Celsius and line a baking sheet with parchment paper or a silicone baking mat. Mix the eggs, honey, and milk together. Cut the butter into small pieces. In a large bowl, combine the flour, baking powder, baking soda, and salt. Add the butter and rub it into the flour mixture with your fingers or a pastry cutter until the mixture resembles coarse crumbs. Add the egg mixture to the dry ingredients and stir with a fork until the dough is moist and sticky. Do not overmix. Fold in the chopped walnuts.

2. Gently knead the dough by hand or with a rubber spatula 8 to 10 times. Turn the dough out onto a lightly floured work surface and divide it in half. Shape one half into a circle about 12 cm in diameter. Cut into 6 wedges and place on a baking sheet. Repeat with the remaining dough. At this point, the buns can be frozen on the baking sheet, wrapped in plastic wrap. There's no need to thaw the buns before baking—just increase the baking time by 2 minutes.

Step 3

3. Bake the buns for about 20 minutes, until golden brown. Let cool for 10 minutes before serving, or wait until the buns have cooled to room temperature.
