
Honey cookies without eggs
Description
This recipe won’t take much time. You can make egg-free honey cookies in next to no time. The recipe will see you through in any situation. The cookies use only four ingredients: flour, baking powder, butter, and honey. They’re made without eggs—which means without egg whites or yolks. That can matter to a lot of people, for different reasons. The dough is rolled into balls with your hands. If you have a bit more time and kids with nothing to do, you can invent something fun. The dough keeps well—you can stash it for up to a week ahead.

Prepare all the ingredients.

In a deep bowl, combine the flour, butter diced into cubes, baking powder, and spices to taste.

Rub everything together with your hands until it forms crumbs.

Add honey. If the honey is thick, melt it first in the microwave or in a saucepan on the stove.

Mix the dough until you obtain a homogeneous mass that sticks together well like modeling clay. Wrap the dough in plastic wrap, flatten it slightly, and refrigerate for one hour.

When you’re ready, simply pinch off small pieces of dough, roll them into balls the size of a walnut, and place them on a baking tray lined with parchment paper.

Lightly flatten the cookies with the bottom of a glass or your hand. Bake in the oven at 175°C (fan off: top and bottom heat) until golden brown. Don’t overbake the cookies!
