
Honey cake in 30 minutes
Description
Homemade baked goods for tea. Any honey can be used for the cake, but the variety will determine the tone and aroma of the finished layers. Be sure to use thick sour cream, with a fat content of at least 20%. If you're not sure it will whip, add a sour‑cream whipping mix. Or replace it with whipped cream or custard. However, a “Medovik” like this will require more time. It can be served with tea or coffee.

Prepare all the necessary ingredients for making the "Medovik" cake in 30 minutes.

In a small saucepan or skillet, place the honey and heat over low heat until liquid. Add the baking soda.

Boil the honey with baking soda over low heat, stirring, for 1‑2 minutes. The mixture will foam, but that's normal. Add butter to the skillet.

Cook the mixture until the butter melts, stirring. Remove and let cool.

Break the eggs into a bowl and whisk on high speed for 2 minutes. Then, while whisking, gradually add the sugar.

Pour the honey mixture into the beaten eggs and stir until smooth.

Sift the flour through a fine sieve into the bowl with the mixture.

Remove the finished cake layer, peel off the paper, and immediately cut it into equal pieces. I ended up with five of them.

Spread all layers, place them one on another. Cover the top and sides of the “Medovik” with cream.

Using a blender, grind the leftover cake layers into fine crumbs.
