Honey cake with dulce de leche and sour cream

Description

Homemade pastries for tea. A colorful honey cake can be made ahead of time and left to soak overnight in the refrigerator or on the balcony. All your family and friends will gladly try such a treat. The main thing is that there is enough for everyone. The pastries are ready. Serve at the table.

    Prepare the listed ingredients. Buy boiled condensed milk or “Iriska” (dulce de leche); they are sold in any supermarket or store.

    Pour milk of any fat content into a kazan or a saucepan with a non-stick bottom, add the honey and butter. Place the pot on the stove and set the heat to moderate.

    Add the sugar and salt, mix thoroughly, and heat until the butter melts. Then add the baking soda and mix — be careful! When you add the baking soda, a very abundant, fluffy foam forms! Turn off the heat.

    Add one third of the wheat flour and knead into a sticky dough. This is done so that when you add the eggs, they do not curdle in the hot mixture.

    Then crack the chicken eggs into the bowl one at a time and mix the dough thoroughly. After that, add more wheat flour, reserving a little for rolling out the dough.

    Knead a firm honey dough and place it in a bag. Chill in the refrigerator for half an hour — it will become nicer and more cohesive, and easier to roll out.

    Divide the dough into equal portions and roll each out on parchment paper into round sheets. Bake in an oven preheated to 180°C for 5–7 minutes until golden brown, then remove and let cool. Trim the finished layers using a plate; do not remove the trimmings.

    When the layers have cooled, beat boiled condensed milk with sour cream of any fat content. There is no need to add sugar or sour cream thickener!

    Place one cake layer on a plate and spread 1½–2 tbsp of cream on top. Cover the whole surface evenly.

    Do the same with the remaining layers. Frost the top and sides of the cake with the cream as well.

    Coat the cake with the prepared honey crumbs and refrigerate for at least 2 hours to let it soak through.
