
Honey cake with strawberries and sour cream frosting
Description
You can add strawberries to the cake as fresh berries, or make a strawberry filling. Keep in mind that with fresh berries, the cake keeps for much less time. Serve warm or chilled. Perfect with tea.

To prepare the cake, gather the ingredients you need. Sift the flour in advance through a sieve to aerate it and incorporate air.

To make honey dough, combine butter with honey and heat until the butter melts.

In a separate bowl, mix the eggs with the sugar.

Combine the egg mixture with the honey mixture (not hot!). Return everything to the heat and bring to a boil. Stir in the baking soda.

The mixture will start to foam and increase in volume. Stirring, heat it for a couple of minutes, then take the pot off the heat. Cool until warm.

Gradually add the flour and knead the dough.

Cover the finished dough and let it rest for 30–40 minutes. Do not add extra flour.

Roll out the dough, bake it, and cut out the cake layers to the required diameter. My layers are 16 cm. The leftover dough will be used to coat the finished cake.

For the strawberry filling, mix chopped strawberries with sugar and starch. Place over heat and bring to a boil.

If necessary, you can add a little water. Let the strawberry filling cool.

To make the cream, combine full-fat sour cream with confectioners’ sugar.

Whisk until thick and creamy.

Spread the honey cake layers with cream and add the strawberry filling. Set aside a little cream for frosting the outside of the cake.

For the cake to come out even, wrap it in acetate film and pull it tight in the ring. Refrigerate for 6 hours or overnight.

Remove the soaked cake from its packaging. Spread cream on the sides and top. You do not need to use a lot of cream or coat it thoroughly. It is enough simply to have a surface for sprinkling with crumbs.

Crumble the leftover cake layers and sprinkle them over the cake. You can sprinkle just the sides, or the top as well.

Decorate the cake with berries and serve it at the table.
