
Sugar-Free Medovik
Description
The pastry is simple and quick to make. A very easy Honey Cake (Medovik) that even a beginner home cook can handle. We bake the layer as one sheet, then cut it into portions. The dough itself is made without added sugar or wheat flour. I replaced sugar with honey and used corn and rice flour. For the cream I used soft ricotta cheese, which can be substituted with soft cottage cheese or thick Greek yogurt. Prepare the necessary ingredients for making a sugar-free "Medovik" cake.

In a bowl, beat the chicken eggs, add the honey and thick Greek yogurt. Mix the mixture thoroughly with a whisk.

Add the sifted flour, salt, and baking soda. Mix.

The dough should have the consistency of thick sour cream.

Pour the batter onto a baking sheet lined with silicone-coated parchment paper. Place in an oven preheated to 180°C for 15–20 minutes.

Remove the baked crust and let it cool.

Then divide the dough into 4 equal rounds.

Trim the edges off the cake layers.

Finely crush the cake edges and walnuts into fine crumbs.

Prepare the cream: combine ricotta, yogurt, and honey.

Assemble the cake: place 1 layer on a plate.

Add about 2–2.5 tablespoons of cream and spread over the entire crust.

Stack all the layers this way, spreading cream between them. Then coat the cake with cream on all sides.

Sprinkle the top and sides with crumbs and refrigerate the cake for 6-8 hours.
