
Honey Cake
Description
Be sure to use high-fat cream and sour cream, otherwise the frosting won't be thick enough and may spread. Depending on the flour quality, you might need slightly more than stated in the recipe. The main thing is to achieve an elastic, thick, and pliable dough. Decorate the cake with fresh berries, and it will be not only delicious but also beautiful.

Place the butter, sugar, and honey into a saucepan. Melt the sugar over low heat, stirring constantly.

Using a mixer, beat the eggs into a fluffy foam. Gradually pour the hot syrup in a thin stream into the beaten eggs, vigorously whisking with a whisk or mixer.

Then gradually add the sifted flour and baking soda neutralized with vinegar, and knead a thick dough. It should not stick to your hands.

Divide the dough into 8 equal parts and roll each part into a circle about 23 cm in diameter. Remember to dust the work surface with flour to prevent the dough from sticking. It's best to roll the dough while it's still warm.

Using a plate, cut even circles from the rolled dough. Transfer to parchment paper and bake at 180 degrees for 4-5 minutes until golden. Bake the dough scraps as well, then crush them into crumbs using a rolling pin or blender.

Beat the cream with a mixer until stiff peaks form. In a separate bowl, beat the sour cream with powdered sugar. Combine both mixtures until smooth.

Start assembling the cake. Spread cream on each cake layer. Then cover the sides and top of the cake with cream. Sprinkle all over with crumbs from the trimmings and refrigerate the cake for at least 3 hours.
