Instructions
- 1
Step 1

For the sponge, we warm a small amount of milk, mix it with the yeast and one teaspoon of sugar, then leave it in a warm place for 10 minutes. Now we combine beaten eggs, sour cream, melted butter (50 grams), the remaining milk, and salt, and finally add the sponge.
- 2
Step 2

We begin gradually adding the flour. We need to knead a fairly thick, elastic dough. Cover the finished dough with a towel and place it in a warm spot for an hour and a half.
- 3
Step 3

While the dough is rising, we start preparing the filling. The nuts should be lightly fried in a pan without adding oil.
- 4
Step 4

Now we crush the nuts using a rolling pin, remembering to set aside a couple for decoration. Mix the crushed nuts with powdered sugar, cardamom, and cinnamon.
- 5
Step 5

When the dough is ready, we divide it into 10 parts, with one part being larger than all the others, and shape the dough into balls.
- 6
Step 6

First, roll out the largest ball and carefully place it on parchment paper. The size of this layer should be larger than the pan, as we will fold its edges at the end.
- 7
Step 7

Brush this layer with melted butter.
- 8
Step 8

Now we roll out the second dough ball and place it on top of the first one; it should be slightly smaller in size (approximately the size of the baking dish you'll be using). We brush it with oil and place the filling on top.
- 9
Step 9

Then the next layer, again brush with oil and add the filling, repeating this for all layers. Before placing the final layer, tuck in the edges of the first layer and place the last one on top of them.
- 10
Step 10

Now we brush the surface of the baklava with beaten egg and cut it into diamonds, placing a nut on each diamond to decorate. Place the baklava in a preheated oven at 180 degrees for 15 minutes.
- 11
Step 11

Then we take it out and pour melted butter around the entire perimeter, then return it to the oven for another 15 minutes.
- 12
Step 12

Meanwhile, mix the water and honey.
- 13
Step 13

After the time has elapsed, remove the baklava again and pour the honey syrup over it, then place it back in the oven for another 5–10 minutes. That's it—once the baklava has cooled slightly, it's ready to be served.
