Vegan Honey Cake

Description

Homemade pastry for tea. This fasting dish will completely shatter the stereotype that fasting food is tasteless and rather boring. This gingerbread cake will become a real centerpiece for your table, especially if you decorate it with something special. I like to brush the finished cake (once it has cooled down!) with cranberry jam or any jam you have in the fridge. You can also use powdered sugar or crumbled halva. Serve warm or chilled. Perfect with tea.

    Step 1

    I mix sugar, water, honey, and vegetable oil. Stirring, I heat the mixture to a temperature of 60 degrees.

    In a large bowl, mix the sifted flour, cocoa, baking powder, cinnamon, and cardamom.

    Combine the resulting mixtures and beat with a mixer. You can do this with a fork, but then the batter will not be as airy.

    Add raisins and nuts.

    I pour the batter into a silicone mold previously sprayed with water. I place it in a preheated oven at 200 degrees and wait for 35 minutes.
