
Honey caramel
Description
The dish is prepared without unnecessary complications. The caramel can be made from any type of honey. When heated, honey does not become carcinogenic; it simply loses its beneficial properties, but the sweetness remains. The finished dessert can be served at the table.

Prepare the listed ingredients. You can use any type of honey, except buckwheat honey—it tastes bitter.

Place the honey in a non-stick pan, pour in the water and lemon juice. Put the pan on the stove and bring to a boil—plenty of foam will form. Reduce the heat to the lowest setting and simmer the honey for about 4–5 minutes, until the mixture turns a caramel or dark color, as the cream will later lighten it.

Then remove the container from the stove and let it cool for 1–2 minutes. Pour in the cream and mix quickly. Place back on the stove and bring to a boil.

Turn off the heat and let the caramel cool.

Then pour it into a jar or container, place it in the cold, and chill thoroughly; otherwise, it will not thicken.
