
Pork medallions
Description
The recipe won't take much time. Aromatic, tender pieces of meat combined with a bright and exceptionally creamy sauce. The sauce also goes perfectly with potatoes, which can be served as a side dish or prepared a bit later. Serve hot.

1. The tenderloin is wrapped with bacon. Make sure each strip of bacon overlaps the next.

2. Take a sharp knife and carefully slice the meat, always cutting across the grain. The thickness of the pieces should be about 2 cm. Place the sliced meat onto a lightly oiled skillet.

3. Season with pepper and salt. Sear on both sides for 1.5–2 minutes over medium heat. Then place the meat in a warm spot to keep it from cooling down.

4. Now let's prepare the sauce. Remove the seeds from the pepper, chop into small pieces, and place them in the pan where the meat was fried. Add a little ground paprika. Cook the pepper for about five minutes, stirring constantly. Pour in the cream and continue heating.

5. Bring the cream to a boil and cook until the peppers become very soft. Add pepper and salt, mix everything well. Using a blender, blend the peppers and cream into a smooth puree. Add flour and bring to a boil to thicken the sauce.

6. Place the meat on a plate. Two pieces per serving, with sauce. Serve with vegetables or fried potatoes as a side dish.
