
Tomato Medallions
Description
The recipe won't take much time. For the medallions, choose firm tomatoes that aren't watery—then the filling will hold together well after slicing. Choose dry sausage that isn't too fatty. If you don't want to cut the sausage, you can grate it on the coarse side of a grater. Slice the finished tomatoes with a very sharp knife. Serve the appetizer at the table.

Prepare all the necessary ingredients for making tomato medallions. Wash the tomatoes and green onions and pat them dry.

Finely dice the sausage and place it in a bowl.

Add softened butter to the bowl with the sausage.

Finely chop the green onions and add them to the bowl.

Grate the cheese on a medium or fine grater and add it to the bowl with the sausage, butter, and onion. Mix everything well; if necessary, salt the mixture.

Cut off the tops of the tomatoes and scoop out the centers. If the tomatoes are juicy, pat the insides dry with a paper towel.

Tightly fill the tomatoes with the filling and refrigerate for 3–4 hours. Cut the tomatoes into medallions and serve.
