
Chicken medallions with kumquat
Description
The dish is prepared without unnecessary complications. Instead of chicken, you can use pork or beef, though cooking time will then increase. With chicken breast, however, there were no problems or difficulties at all. The meat turns out tender and juicy, and the flavor of the finished dish is unusual and piquant. In addition to kumquats, I also add pieces of pineapple. 1. I thoroughly wash the chicken breast and dry it well, then carefully remove the skin without damaging the fillet. I tenderize it with a meat mallet and cut out evenly-edged rounds. 2. I place the medallions on a baking tray greased with vegetable oil, then season them with salt and pepper. 3. I spread mayonnaise over the pieces of meat. 4. I cut canned pineapple into small pieces and place them on the medallions. 5. I wash the kumquats, slice them thinly into rings, and arrange them over the meat. 6. I grate hard cheese on a coarse grater and generously sprinkle it over each piece. 7. I place the tray in a preheated oven at 180°C (356°F) for 20–30 minutes. I serve the dish hot. The finished dish is ready to be served.
