
Turkey medallions with mushrooms
Description
The recipe won't take much time. Turkey, like other meats, goes very well with mushrooms. I'm cooking turkey breast medallions. You can make a sauce from the mushrooms, but this time I preferred a chunkier texture and sliced them into pieces. Try different variations. Serve hot.

I wash the turkey breast and slice it across the grain (this is very important) into pieces about 1.5-2 centimeters thick. I season with salt and pepper.

I pour the flour onto a plate, coat each slice on both sides, and then shake off the excess.

In a skillet, melt a tablespoon of butter and add the medallions, searing them on both sides until golden brown.

Transfer the medallions to a bowl and cover with foil to keep warm.

I wash the mushrooms and slice them. I heat the pan with the remaining oil, add the mushrooms, and sauté for 3-5 minutes. Then I add shallots (sliced into half-rings), parsley, salt, black pepper, tarragon to taste, and pour in the vermouth. I cook until the wine has evaporated.

Place the still warm medallions on a plate, garnish with peppers, top with mushrooms and onions, and serve the dish warm.
