
Eggplant Medallions
Description
A tasty appetizer for any gathering. A colorful and juicy appetizer is perfect as an aperitif with a main fish or meat dish. You can make it every day in autumn — when such vegetables are in season. Grate the cheese ahead of time on a fine-hole grater, using any variety of this product.

Prepare the specified ingredients.

Rinse the vegetables in water, trim the eggplant stems, and remove the green cores from the tomatoes. Slice all the vegetables into rounds no thicker than 1–1.5 cm.

Line a baking sheet with parchment paper, brush it with oil, and arrange the eggplant slices on the paper. Season them with salt and drizzle with oil.

Place tomato slices on the eggplants. Preheat the oven to 200 degrees and bake the vegetables for about 15 minutes until the eggplant slices are tender.

Then sprinkle grated cheese on top and bake for another 2–3 minutes until it melts.
