
Medallions
Description
Medallions are an exquisite dish of French cuisine, served in the most expensive restaurants. But it's also easy to prepare incredibly delicious, juicy, and aromatic meat at home. I'll tell you how.

Let's prepare an aromatic meat marinade: place tomatoes, crushed garlic, celery, rosemary, thyme, and half of the chili into a saucepan. Then add salt to taste, balsamic vinegar, and olive oil, and set the saucepan over low heat. As soon as the oil begins to boil, remove it from the heat.

Wash and dry the pork tenderloin. Using a sharp knife, cut it into medallions 1.5-2 cm thick.

Then wrap each piece of meat in a thin strip of bacon and secure with toothpicks. For the side dish, I have potatoes. I sliced them into small pieces, coated them with the oil from the pan, and put them in the oven for 10 minutes at 180 degrees.

It's perfect to serve medallions with a sauce. In a small bowl, add finely chopped garlic and cilantro, grated Parmesan, salt, and yogurt. Mix everything well and set aside to let it infuse.

Brush the meat with aromatic oil and sear the medallions on the grill for 1 minute on each side. You can also use a regular frying pan.

To the almost cooked potatoes in the oven, I added the medallions for 10 minutes. Don't forget to remove the toothpick from the medallions before serving.

You can serve the medallions with sauce as a standalone dish, or do as I did: with sauce, potatoes, and braised tomatoes. I drizzled the dish with the remaining aromatic oil. Delicious!
