Description

The recipe for the dish "mazyunya" comes from traditional Russian cuisine. This is a healthy and very tasty treat. Preparation: Here is how radish in molasses was prepared. The radish root was cut into small slices, making sure the pieces did not touch each other, then threaded onto spits and dried in ovens after baking bread, or in the sun. Once all moisture had evaporated from the radish, it was crushed and sifted through a sieve. At the same time, white molasses was boiled in a pot. The prepared molasses was poured into the radish flour, adding various spices such as nutmeg, cloves, and pepper, then the pot was sealed tightly and placed in the oven for two full days. This thick mixture was called "masyunya." In a similar manner, mazyunya was also prepared using watermelons, dried cherries brought from the lower reaches of the Volga River into Muscovy. To make this treat from the mentioned fruits, watermelon was cut into very thin pieces (about two fingers thick from the rind) and soaked in lye for one day. Meanwhile, molasses was boiled with ginger, nutmeg, pepper, and cinnamon, and then the watermelon pieces were added. Melons were used in the same way to prepare molasses.
