Matnakash on kefir

Description

Perfectly pairs with tea and coffee. This bread is great for any dish. But we especially love having it with meat dishes served with sauce or gravy, as matnakash is so convenient for dipping, collecting every last bit of sauce. For best results, serve warm or chilled. Ideal with tea.

    Prepare the necessary ingredients. Sift the flour, then mix it with the dry yeast and salt.

    Make a well in the flour, pour in the kefir and warm water, and mix with a fork until the flour absorbs the liquid. Then knead using a mixer. Knead the dough for 10 minutes; it will remain sticky. Cover the bowl with plastic wrap and place in a warm spot for 1 hour.

    After this, knead the dough for another 5 minutes. Then, pour vegetable oil along the edge of the dough and use a spoon or silicone spatula to coat the dough with it. Do not work the oil into the dough.

    Line a baking sheet with parchment paper. Place the dough on it, flatten into a round shape, and let it rest for 15 minutes.

    Using the back of your hand or the handle of a knife, make indentations along the edge and a cross in the center of the flatbread. Place the matnakash in a preheated oven at 200°C and bake for 15 minutes until golden brown.

    Cool the finished bread, covering it with a cotton cloth.

    Remove from the oven and serve warm or cooled.
