Butter-nut cream
Description
You can make a delicious cream not only with walnuts, but also with peanuts or hazelnuts. The key is not to grind the nuts into crumbs for too long, otherwise they will become oily. You can optionally add any flavoring to the cream: citrus, vanilla, or nut flavor.
Instructions
- 1
Step 1

Prepare the listed ingredients. Instead of citrus juice, you can use milk of any fat content.
- 2
Step 2

Dry the walnut kernels in a pan and grind them in a grinder into crumbs for about 3-4 minutes.
- 3
Step 3

Place the powdered sugar and butter into the bowl of a food processor.
- 4
Step 4

Beat everything for approximately 2-4 minutes at high speed using the equipment.
- 5
Step 5

Squeeze juice from a tangerine or substitute with 50-60 ml of store-bought orange juice. Add the nut crumbs and sugar to the juice, then heat in the microwave for about 1-2 minutes. Stir and heat again until the mixture thickens. You can also do this in a saucepan on the stove. Make sure to cool it down completely, as you'll be adding the crumbs to oil, and you don't want the oil to melt!
- 6
Step 6

Place the crumbs into the whipped butter and mix thoroughly.
- 7
Step 7

Place the butter-nut cream into ramekins or bowls, serve it at the table, or use it to coat sweet pastries, shaping it into a cake or dessert.
