Description

A delicious addition to everyday and festive dishes. This fragrant oil with rosemary and garlic will make even plain meat or fish much more flavorful. Salads dressed with this oil will come alive with new colors and aromas! For those who enjoy a bit of spice, I recommend adding half a chili pepper.

    Prepare all the necessary ingredients. Use high-quality unrefined "Extra virgin" oil. Fresh rosemary is preferable, but if you can't find it, substitute with dried rosemary.

    In a small saucepan, pour the oil and warm it to about 40-50 degrees. Do not bring to a boil!

    Add 1-2 sprigs of rosemary, 2 large garlic cloves (halved), Provence herbs (optional, but they make it more aromatic), lemon slices, and salt and black pepper to taste, if desired.

    Warm for another minute over the lowest heat, then remove from the stove. Let the oil cool and infuse with the aroma of garlic and herbs.

    Add a couple of garlic cloves and fresh rosemary—1-2 sprigs—to a suitable container for butter.

    Pour in the cooled oil along with the lemon, garlic, and rosemary. Place in a dark spot and let it steep for 3 days. After this time, you can strain the oil, or leave it as is—but in the latter case, the shelf life will be shorter, and it must be stored in the refrigerator.

    Store the butter in a dark and cool place. You can store it in the refrigerator, but before using, shake the jar slightly.
