Prepare all the ingredients.

Soak the lentils and rice in separate bowls overnight.

Then rinse the grains and dry them. Blend them separately in a blender with a small amount of water. You should obtain a homogeneous semi‑liquid paste.

Combine both mixtures. Add sugar, salt, and 1/2 part of chopped hot pepper. Stir, cover the bowl with plastic wrap, and place it in a warm spot for 2–6 hours to ferment.

Thoroughly heat the pan, coat it with coconut oil, and pour in 3–4 tbsp of batter. Quickly spread the batter over the pan with a spoon. Fry the pancake for 2–3 minutes on one side, a little less on the other. Stack the finished pancakes on top of each other.

For the filling, boil the potatoes in their skins, peel them, and mash them into a puree.

In a mortar, grind ginger and half a portion of hot pepper with a small amount of water. Melt coconut oil in a skillet. Fry mustard seeds and cumin, then add the hot pepper and mustard paste. After a minute, add turmeric, then the potatoes. Fry everything together for about 5 minutes. At the end, season with salt to taste and add finely chopped cilantro.

Fill the pancakes with potato filling. You can roll them into tubes or fold them in half.
