The recipe won't take much time. Any pies are always a hassle. But these fried envelopes with lamb filling can win over any gourmand with their bright, spicy flavor. They are especially tasty when served hot! I'm telling you, the pastry is ready. Serve it at the table.

Prepare the dough. In a bowl, whisk the egg with sugar, a pinch of salt, and 90 ml of water.

Melt the butter and let it cool. Sift the flour into a large bowl, make a well. Pour in the egg mixture, the butter, and stir with a fork.

Knead the dough by hand, mixing until smooth. The dough should not stick to the hands; if necessary, add flour. Let the dough “rest”.

For the filling, finely chop the onion, garlic, and ginger and sauté them in a large skillet with a small amount of olive oil. Add curry, ground meat, sugar, and salt to taste. Cook, breaking up lumps with a spatula. Fry until done.

Slice the onion into rings or half‑rings. Place in a bowl, add vinegar, sugar, salt. Mix with your hands and let it marinate.

Divide the dough into 8–10 pieces. Roll each piece into a circle about 15 cm in diameter. Place the filling in the center and fold it into an envelope.

Place the pies in the heated oil seam side up. Fry for 4-5 minutes on each side.
