
Wild Strawberry Marmalade
Description
A preservation recipe without unnecessary complications. Wild strawberry marmalade, whose recipe I’ve set out below, can turn out jelly-like or firmer—chewier, so to speak—it all depends on the amount of water and how juicy the berries are. But either way, it’s clear this is simply delicious, since the berries weren’t heat-treated. Marmalade using this recipe can be made from any berries or fruits that yield a good, not runny purée. Ingredients for making strawberry marmalade.

Soak the gelatin in cold water for 40 minutes until it blooms.

Blend the berries in a blender.

Add powdered sugar and blend again.

You should have a homogeneous mixture.

Bring the bloomed gelatin to a boil, but do not boil it!

Mix the puree with the gelatin until smooth and homogeneous.

Pour the finished marmalade into molds or onto a baking sheet lined with plastic wrap. Refrigerate until set.
