Description

To make berry jelly at home, you can use not only currants but also any other berries of your choice. The amount of sugar depends on your taste preferences.

    1. First, prepare the berries. Wash the red currants, dry them, and remove from the stems.

    2. There are two preparation options—the first, as in this case, involves rubbing the fresh berries through a sieve. Alternatively, the berries can be briefly cooked beforehand—this method is suitable when using frozen berries.

    3. Pour warm water over the gelatin and let it sit for some time. If desired, it can be replaced with agar-agar, for example.

    4. The resulting juice should be placed over heat and brought to a boil. Add sugar to taste. If the berries are too sweet, you can add lemon juice. Simmer over low heat for about 5 minutes, until the sugar dissolves completely. In this case, it is not necessary to reduce the syrup significantly.

    5. Pour the gelatin into the boiling syrup and, stirring constantly, ensure it dissolves completely. If using agar-agar, simmer it with the syrup for about 3–5 minutes. Strain again through a sieve or cheesecloth and pour into molds.

    6. When the berry jelly has set (after about an hour and a half), you can roll it in sugar or powdered sugar, or coat it with melted chocolate.
