
Gooseberry jelly
Description
The recipe won't take much time. Prepare gooseberry jelly as follows: blend the berries into a puree using a blender and bring to a boil. Then strain the pulp through a sieve and reduce by half. Add sugar, then after half an hour pour into a mold and cool until completely set. Cut the ready jelly into pieces and roll in sugar. Serve chilled.

Blend the gooseberries in a blender until smooth and bring to a boil on the stove.

Then carefully press the pulp through a sieve.

Put the strained purée back on the heat and cook until the volume is reduced by half. Then, stirring, add the sugar and continue cooking over low heat for another half hour. Pour the purée back into a saucepan, place over heat, and reduce by approximately half again.

Grease the mold for setting the jelly with brandy.

Pour the hot marmalade into a mold, cover with parchment paper, and cool to room temperature. Then refrigerate until completely set. Cut the finished marmalade into pieces and roll in sugar.
