Quince jelly

Description

The recipe won't take much time. Quince jelly is a very delicious treat that requires considerable time and effort. While preparing quince jelly, the mixture will look very similar to jam. The cooking principle is also quite similar to making jam. However, the jelly drying process is fundamentally different from preserving methods used for jam or marmalade.     Wash the quince thoroughly, peel it with a small knife, then boil it, drain the broth, and discard the peel.

    Peel the quince, cut it into 4 parts, remove stems and seeds. Place the fruit in a preserving pan, pour with the water in which the quince peel was boiled, and add lemon juice and lemon zest.

    After the quince has cooked down, add sugar.

    Boil the jam until done, until the quince is completely softened and the sugar has fully dissolved. This will take about an hour. The jam should THICKEN.

    Then the quince should be cooled slightly and blended. After that, the jam should be cooked in several stages over several days, constantly monitored and stirred occasionally. The jam should be brought to a boil and cooked for 10 minutes, then removed from the heat. This procedure is repeated 5-6 times.

    Pour the hot marmalade into molds and cover with baking paper moistened in alcohol.
