
Marinated Pattypan Squash with Cabbage

Perfect for winter pantry storage. Here is a simple, classic recipe for marinated pattypan squash with cabbage. From the listed ingredients you will get three jars of marinated pattypan squash: two one-liter jars and one half-liter jar. If you like, you can add other vegetables, such as zucchini or carrots. Blanch the cauliflower for 5 minutes in boiling water.

At the bottom of sterilized jars, place: dill umbels, cloves, peppercorns, pattypan squash and whole tomatoes (pierce at the base), cauliflower florets, and bell pepper cut into strips.

Prepare marinade 1L: Pour salt and sugar into a saucepan and boil until fully dissolved. Then boil for another 5 minutes. Add vinegar before the end of boiling.

Place garlic cloves and a small piece of red pepper in each jar. Pour hot marinade into the jars and sterilize them in a pot of hot water for 15 minutes, then seal the lids and turn the jars upside down until completely cooled.
