Homemade preserves keep for a long time. Pickled green onion prepared for winter may turn out a little less green, but it is no less nutritious and tasty than fresh. The marinade removes excess bitterness, making the onion crisp and sweet-tart. Give it a try—it is a very tasty preserve. Serve at the table or store in the pantry.

    1. Wash the onions thoroughly and let them drain. Trim them so the shoots fit the jar size. Sterilize the jars and pack the shoots vertically, close together.

    2. Make the marinade. Put water on the stove with pepper, dill sprigs, and a bay leaf; dissolve the salt and sugar. When it comes to a boil, add the vinegar, stir, and strain through cheesecloth directly into the jars with the onions. Seal with sterilized lids for winter storage.

    3. Store the jar upside down until it has completely cooled, but do not cover it with a blanket. This way, in winter the onions will stay firm and crisp. Done!
