
Pickled Tongue
Description
The recipe won't take much time. If you're expecting guests, be sure to make this delicious appetizer — though buy several times more offal, as guests will definitely ask for seconds, especially the men! Pickled tongue can be stored in the refrigerator for about two days, but the appetizer never lasts until the end of its shelf life — it vanishes from the plates in an instant. Serve the appetizer at the table.

Prepare the specified ingredients.

Rinse the pork tongues in water, scrape off any dirt with a knife, and place them in a pot. Add all the salt and bay leaves. Pour in water almost to the top of the pot and set it on the stove.

Simmer the tongues for about 1.5 hours over moderate heat, adding water as it evaporates so they remain covered.

Peel the onion and garlic. Finely chop and transfer to a deep bowl. Add a pinch of salt, ground black pepper, mustard seeds, oil, and vinegar. Mix the marinade.

Remove the tongues from the broth one at a time and clean off the coating; slice the meat into a container for the marinade.
